Thanksgiving Desserts

This Thanksgiving I was with my family and cousins in Tampa, Florida. And as usual, I was in charge of the desserts.

My cousins had never tasted any of my desserts before so I wanted them to try some of my specialties – that included moist and delicious red velvet cupcakes, pumpkin spice cupcakes, flourless chocolate cake and cinnamon rolls.

It was a lot of fun making these desserts even though I wasn’t in my own kitchen and I didn’t have my faithful Kitchen Aid mixer with me. But they all turned out great as all these recipes can be made by hand with just a little more effort.

For the red velvet cupcakes, I wanted to try something different. So after the cupcakes were baked and cooled, I took a circle cutter and cut out little cake circles out of the cupcakes. I then made little mini cakes by stacking two of the cake circles on top of each other with some piped vanilla cream cheese frosting in between the slices and on top. And for a little bit more decoration, I added chocolate shavings on top.

I had recently developed the perfect pumpkin spice cupcakes that are paired with delicious cinnamon cream cheese frosting. For Thanksgiving, I wanted to add something extra to the cupcakes. I found some semi-sweet chocolate chips and folded them into the batter to make them into pumpkin spice chocolate chip cupcakes with cinnamon cream cheese frosting.

It can’t get any better than that ^^^^

I simply garnished the cupcakes with cinnamon sticks and also sprinkled them with more cinnamon cause you can never have too much cinnamon ;).

I also made cinnamon rolls that morning but they were all gone by the time I got my camera out 🙂 My cousins, aunt and uncle liked them so much that I decided to make them again the very next day as well.

My brother’s birthday also always falls during the week of Thanksgiving, so for him I made a yummy chocolate flourless cake with homemade vanilla whipped cream, strawberries, and vanilla ice cream. Unfortunately, I couldn’t make him a decorated cake because I didn’t have any of my cake decorating tools with me, but nevertheless the chocolate cake turned out to be a delicious birthday cake.

We had an amazing Thanksgiving dinner. My aunt made a yummy turkey along with the traditional appetizers, and it was delicious!

I was so happy that everyone liked the deserts and I am definitely looking forward to next year.
