Here is something that will make you wanting for more (I’m not even kidding)- delicious, crunchy, sweet, and flavorful almond and vanilla granola!
Yeah, it’s as good as it sounds. Probably even more.
You know the packaged granola you see every time you go to the grocery store? The ones with a million ingredients on the labels? Yup, those are no good. Not when you can make a much more tastier, AND healthier version without any preservatives.
This granola literally had me and my parents fighting over who got the last bit of it. It was that good.
The best part? There’s no guilt whether you’re munching on it as a snack, eating it for breakfast, or even while your driving to the store to get some more oats to make some more granola.
This certain granola I made incorporated lots of vanilla extract, almonds, and cinnamon.
Oh, and I may have added some very dark mini chocolate chips at the end. But that of course is optional. I just have no self control when it comes to adding chocolate to everything.
This recipe is so good and couldn’t have been easier. You just have to toss the ingredients together, spread it on a lined baking sheet, and bake. You can throw in a whole bunch of other stuff as well including pecans, walnuts, toasted pumpkin seeds, dried cranberries etc.
Waiting for it to be finished baking was probably the hardest part. It does take a little bit of time though – about 30-35 minutes.
But other than that, I highly suggest you try out this recipe, but I must warn you, it is very addictive.

I’ll have the written amounts for the ingredients down below.
The first thing you need to do is preheat your oven to a very low heat- 300 degrees F. Then grab a big bowl and toss the oats with the cinnamon and salt (I put a lot of cinnamon in my granola but you can put a smaller amount if you’d like)
Make sure your almonds are sliced, and then stir them into the oats.
Next you need to melt your coconut oil and then stir it with the maple syrup and vanilla extract in a small bowl.
Pour the mixture over your oats and coat the oats completely.
Spread the mixture evenly on 2 baking trays lined with parchment paper or a silicon mat. Bake for about 30 minutes and make sure to kind of stir the granola every 10 minutes or so. Once done baking, take out trays and if you’d like, sprinkle chocolate chips while the granola is still warm.

Almond & Vanilla Granola
5 cups of rolled oats
1 1/4 cups of sliced almonds
1/2 tbs. of cinnamon
Pinch of salt
1/2 cup of coconut oil
1 cup of maple syrup
2 1/2 tbs. of pure vanilla extract
* 3/4 cup of chocolate chips (mini or regular)
1. Preheat your oven to 300 degrees F. Stir together your oats, cinnamon, and salt in a large bowl. Then stir in your almonds.
2. In a small bowl, melt your coconut oil. Then stir in your maple syrup and vanilla extract.
3. Pour coconut oil mixture over the oats and coat completely.
4. Split the mixture between two baking trays lined with either parchment paper or a silicon mat and spread the oats evenly.
5. Place trays in the oven for about 30-35 minutes and while their baking, stir the oats every once in awhile.
7. Once the granola is baked and out of the oven, immediately sprinkle the chocolate chips. Let granola cool so that it gets more crispy and crunchy.
*Chocolate chips are optional
