Fall is finally here (at least I think it is – California as usual doesn’t understand the changing of seasons so we’ve still got 75 degree weather :/) and I started off the season with a fun cake order for two twin girls’ birthday. As most siblings do, these girls couldn’t agree on a single cake flavor – which is completely relatable because at 17 years old I still get into unnecessarily loud altercations with my 10 year old brother over The Best flavor of cake (which btw is red velvet, sorry Aman I don’t make the rules) – so I compromised and made this chocolate and vanilla layered cake with a vanilla buttercream frosting and a white chocolate ganache topping. A pretty good solution, I think.
I know, I know. I haven’t posted a blog-post in FOREVER. Well a month to be exact. But, I have a perfectly reasonable excuse for it.
I was sick. Really sick.
It was pretty terrible. I basically lived in my bed for a couple of weeks. And what’s worse is that I got sick during the Winter HOLIDAYS!
But that doesn’t mean I didn’t bake anything, cause everyone in my family knows that I’ll be the one making Holiday desserts for them to eat. Unfortunately, because I was asleep half the day, and I was exhausted or in a coughing fit for most of the other half of the day, I didn’t get to bake as much as I’d wanted to. But I couldn’t just not post a couple of holiday recipes for you guys. Right?
Last Friday was one of my favorite holidays- It was HALLOWEEN! I have always loved Halloween since I was a toddler. I love the costumes and the candy, but most of all the Halloween baking!
There are so many things that I would’ve made this year, but I settled on a couple of very simple and tasty treats that were really fun to make.
The first treat I made were these very cute mini candy corn themed cupcakes. These were SO easy to make. I basically took some vanilla cake batter and dyed half of the batter orange and the other half yellow with food coloring. Then I put a scoop of yellow cake batter in the cupcake liner and then on top, a scoop of orange cake batter. I let the cupcakes bake like usual and then piped on some white vanilla buttercream on top to complete the candy corn effect.
This week for Easter, I made rice krispy treats. I couldn’t bake anything since I didn’t had an oven at that time (no oven situation explained in last post), so I made rice krispy treats in the shape of Easter eggs! But, this time I made these with a little help from my little brother and his friend.
I also decided to shoot a little tutorial on how to make these delicious treats as well! For a written recipe on how to make rice krispy treats, look below or in the recipes page.
These easy treats were decorated with melted chocolate and sprinkles!
Rice Krispy Treats
½ stick of unsalted butter
4 cups of mini marshmallows
5-7 cups of rice krispy cereal
1. Melt the butter in a large saucepan over medium heat.
2.Add marshmallows and stir until melted.
3.Remove pan from heat and stir in rice krispies, adding a little at a time.
4.Spray a glass pan with baking spray or grease with butter.
5.Press rice krispy mixture into pan making sure your hands are greased as well.
6. Let treats cool for 15 minutes before cutting into squares.
I made these mini vanilla cupcakes for my mom’s friend’s son’s 4th birthday! Since the cupcakes were for kids, I decided to add lots of sprinkles. I also added sprinkles in the cake batter and on top of the frosting. I also made them mini size because everything is better when they’re mini ;).
