Chocolate Fudge Popsicles (refined sugar free!)

It’s summer, and here in California it can get pretty hot. In fact, some days are even too hot to use the oven. But that’s okay, cause I have a no bake summer treat that’s frozen, refined sugar free, and chocolatey! Did I mention the chocolatey part? It’s basically everything you could want in a popsicle.

Coconut Macaroons

If there’s something you should know about me, it’s that I love anything with coconut. So the obvious dessert I should make were macaroons.

Macaroons are delicious mounds of sweetened coconut, condensed milk, and egg whites. Completely different from macarons, which are yummy French delights.

I have been wanting to make macaroons for a while now. I got my chance when I found myself with leftover egg whites from a recipe that I used that only needed the yolks.

Father’s Day Strawberry & Coconut Whipped Cream Tart

Last weekend happened to be Father’s Day, so I had to of course make something for my wonderful dad.

As some of you know, my dad is gluten free, sugar free, and mostly vegan. Given these circumstances, coming up with something that he would really enjoy was a bit challenging. While searching for ideas on Pinterest, I came across a picture of a beautiful strawberry tart that came from a wonderful blogger- What Jessica Baked Next. This inspired me to make a tart like dessert.

Gluten Free Coconut Cake

I have yet another gluten free recipe for those that are health conscious or even people who just want a delicious guilt free treat. It was actually my dad’s birthday last weekend, so I knew I had to make something that was gluten free (since he’s gluten free) and I found a recipe online on how to make a coconut cake. I decided to make my own little twist on the cake and to make it slightly healthier than it already was.

I made this into a coconut lemon cake which turned out to be absolutely delicious. This cake has eggs and a bit of butter, so it isn’t dairy free. BUT, I used fresh dates instead of sugar, so it was also sugar free. Also, don’t be intimidated about using dates. I am definitely not a big fan of raw dates (opposed to my dad who can eat them all day), but you can’t even tell that dates were used to replace the sugar.

Ladybug Cake 4 Kids Cake #8

Here is a lovely cake that you can’t help but adore- a LADYBUG cake!

This cake was made for an 8 year old girl who requested a ladybug themed cake via a non profit organization that I volunteer for called Cake 4 Kids  (more info about Cake 4 Kids click here).  So I thought why not make a ladybug themed cake was that was shaped and decorated to look just like a large ladybug!

Vegan Birthday Pie Cake

On December 1st it was my dad’s 40th birthday and since he is vegan and gluten-free, I decided to make my vegan pie cake topped with toasted shredded coconut and fresh berries. The berries I used were raspberries and blueberries. I used the berries to make a border and to make the number 40 in the center of the pie cake. The pie cake is basically made of almond meal, ground flax seed, grapeseed oil, and sugar.

My dad loved the pie cake and was glad he could finally eat something I baked!
