Cinnamon Roll Breakfast Muffins

You all should know about my obsession with cinnamon rolls by now. I’ve made cinnamon rolls so many times this past couple months, it’s not even funny. Last weekend I craved some buttery, sweet cinnamon rolls (as I do almost every weekend) and I usually make them at night so that I could just pop them in the oven the next morning, but unfortunately I didn’t have the time to make them that night.

My wanting for cinnamon rolls was still there the next morning and I was inspired by this blogpost to somehow make a muffin form of a cinnamon roll. And in almost no time at all, the most amazingly tasty thing ever was created. Cinnamon roll muffins.

Graduation Day Mini Cupcakes

Yeah, It’s that time of the year again! Students are graduating from school and moving on to the next stage of their life. I want to especially congratulate all of you who have graduated. I myself have just graduated middle school which is very exciting.

(I’ve added a couple of my middle school promotion pics down towards the end of the post)

For our last week of school, I wanted to make something special since it was also going to be my last week in middle school. Last year, I had made these  graduation day cake pops for a neighbor that turned out to be pretty cute. So I decided to do something similar this year but with cupcakes.

Thanksgiving Desserts

This Thanksgiving I was with my family and cousins in Tampa, Florida. And as usual, I was in charge of the desserts.

My cousins had never tasted any of my desserts before so I wanted them to try some of my specialties – that included moist and delicious red velvet cupcakes, pumpkin spice cupcakes, flourless chocolate cake and cinnamon rolls.

It was a lot of fun making these desserts even though I wasn’t in my own kitchen and I didn’t have my faithful Kitchen Aid mixer with me. But they all turned out great as all these recipes can be made by hand with just a little more effort.

Pumpkin Spice Cupcakes

Fall is finally here and in my opinion it’s one of my favorite seasons.

And it’s not because of the red and gold leaves or because it’s finally sweater weather, or even because I get a week long break from school.  It’s because I have an excuse to bake with so many flavors.

I mean there’s pumpkin and apple and so many different spices like cinnamon, nutmeg, and allspice.

Today I have here a recipe that’s so easy you don’t even a need an electric mixer. It can be made all by hand. Not to mention that these cupcakes are absolutely delicious.

Scratch Vs Cake Mix

Hi everyone! Today I have something new for you!

A couple of weeks ago, I was really bored and an idea popped into my head.

If you don’t already know, everything I bake is from scratch. I never got a chance to use boxed mixes to make any of my desserts. However, you probably do know that many people use store bought mixes because it does saves time and effort.

In my experience of baking deserts I have noticed that people really enjoy and appreciate a good cake made from scratch. But there are a lot of people who buy cake mixes mainly for the reasons mentioned above as well as for the taste that comes with it.

But I realized that people don’t usually get a chance to try a boxed mix dessert and a dessert made from scratch at the same time, so they can’t really favor one of the two desserts. Continue reading

Mini Tie Dye Cupcakes

Last Thursday I made cupcakes for a school festival just like the cupcakes I made for our school’s fall festival last year.

This time I only made about sixty mini cupcakes unlike last time where I made over one hundred regular sized cupcakes.

I wanted to decorate these in a simple but different way. So instead of just doing a boring cupcake swirl…..

I did TIE DYE cupcake swirls. Yup. I just went against the rules of single colored swirls. Oops.

Cupcakes have never looked so colorful. These were so easy to make yet it looks like something a unicorn would’ve eaten.

Unicorns or not, these cupcakes were single bites of deliciousness.

To get the tie dye effect, you basically take three different colors of frosting (or as many as you like) and place each color, vertically, in different sections of the piping bag. The colors I used were pink, blue, and yellow. When I squeezed the piping bag, the colors slightly mixed creating new colors. The pink and blue created purple, the yellow and blue made green, and the pink and yellow made orange. I used my vanilla cake recipe to make these cupcakes which you can find in my recipes page.

These cupcakes would be a great treat at any festival or party!

Mini Sprinkled Cupcakes!

I made these mini vanilla cupcakes for my mom’s friend’s son’s 4th birthday! Since the cupcakes were for kids, I decided to add lots of sprinkles. I also added sprinkles in the cake batter and on top of the frosting. I also made them mini size because everything is better when they’re mini ;).

Red Velvet “Cake 4 Kids” Holiday Cupcakes #4

Hi everyone! It has been some time since I made a cake for “Cake 4 Kids” ( a Bay Area non profit organization that gives cakes to under privileged children). Since I had time last weekend, I took a request for 2 dozen holiday cupcakes.

When I think of the winter holidays, I immediately think of red velvet. So, I made 2 dozen of the BEST red velvet cupcakes ever! You can find the recipe on my recipes page. But, nothing goes best with red velvet then cream cheese icing swirled right on top of the cupcake! Also, to make these cupcakes more festive, I added red and white sprinkles on top. I really hope the children liked them and I hope you do to!
