50th Chocolate Coffee Birthday Cake

Adding to the list of desserts I made during Thanksgiving week, I made this 50th birthday cake for my mom’s cousin. My whole wheat chocolate coffee cake is a favorite among my family, so I made this along with delicious milk chocolate frosting as the filling.

Brown Sugar Oatmeal Cookies

Cookies are really popular this time of year. There are sugar cookies, chocolate chip cookies, snickerdoodles, gingerbread men, and so many more holiday cookies. I wanted to try something a bit different using two of my favorite ingredients in cookies- oatmeal and brown sugar!

I’m sure there are many recipes out there for brown sugar oatmeal cookies, but it’s usually not the first thing you think of when holiday desserts come up. Well, let me tell you that it should be cause these cookies are absolutely amazing.

Aloha Hawaii! (Pt. 2) {A Taste Of My Life}

This is week 2 of my Hawaii adventure! If you haven’t read week 1 yet, then click here!

Okay, so I left off on Sunday, the last day of week 1. Here I go with week 2, day 8!

Day 8:

As I mentioned in my previous post, this was the day my family and I were going to a Luau. A Luau is basically this big Hawaiian feast where hundreds of people eat delicious authentic food while getting entertained by a number traditional hawaiian dances.

So that evening, my family drove to the Grand Wailea, which is this beautiful resort where the Luau was being held.

Aloha Hawaii! (Pt. 1) {A Taste Of My Life}

(Edit: It took me a LONG time to complete this post as a lot happened in between and I also had to edit hundreds of pictures that were taken which is why I’m posting it few months late :|.)

Summer vacation was upon us and we were looking for some place fun and relaxing to go for vacation. Or rather my dad was looking for places as my mom and I were in Las Vegas during this time. (Click for more on our trip to Vegas)

So basically what happens is my dad calls my mom while we’re in Vegas and tells her that we were going to Hawaii. My mom excitedly asks when. That’s when my dad replies “Oh, in two days”.

Yup, planning two days in advance for a two week trip to Hawaii. Fortunately this wasn’t the first time we’ve gone into a trip with proper planning (refer to Spring Break Trip), so we kind of made the plans along the way. If you know me, then you know I’m not a very spontaneous person, so this was an adventure indeed.

Cinnamon Roll Breakfast Muffins

You all should know about my obsession with cinnamon rolls by now. I’ve made cinnamon rolls so many times this past couple months, it’s not even funny. Last weekend I craved some buttery, sweet cinnamon rolls (as I do almost every weekend) and I usually make them at night so that I could just pop them in the oven the next morning, but unfortunately I didn’t have the time to make them that night.

My wanting for cinnamon rolls was still there the next morning and I was inspired by this blogpost to somehow make a muffin form of a cinnamon roll. And in almost no time at all, the most amazingly tasty thing ever was created. Cinnamon roll muffins.

Cinnamon Crumb Cake (Picture Tutorial!)

Guess what?! Another fall recipe!

Today I made a crumb cake! Crumb cake is also sometimes known as coffee cake. There are multiple variations of this cake, but because we’re getting into the fall season, I went for a cinnamon crumb cake.

A crumb cake is basically a moist cake with a crumble on top and in the center of the cake. The crumble that I used is made with a mixture of two kinds of sugar, cold butter, pecans, and walnuts. You can’t go wrong with those ingredients. 😉

Gingersnaps (Refined Sugar + Gluten Free!)

I feel like fall has officially started. We finally have weather colder than 85 degrees here in NorCal which means I have an excuse to make as many fall like recipes as I want.  I absolutely LOVE fall baking especially if I’m making gingersnaps.

One bite out of these gingersnaps and you’ll taste an explosion of spices and that prominent sweet ginger. It’s basically the definition of fall in your mouth.

Did I mention that they’re gluten free? And refined sugar free? And dairy free? Yup. The best part is that you wouldn’t even know what was missing if you ate one.
