Peppermint Marshmallows

What’s soft, fluffy, festive, and basically the best thing ever?? Peppermint marshmallows of course!

Homemade marshmallows are officially my favorite thing in the world. They taste so much better than regular store bought marshmallows and they have none of those nasty chemicals and preservatives either.

Graduation Day Mini Cupcakes

Yeah, It’s that time of the year again! Students are graduating from school and moving on to the next stage of their life. I want to especially congratulate all of you who have graduated. I myself have just graduated middle school which is very exciting.

(I’ve added a couple of my middle school promotion pics down towards the end of the post)

For our last week of school, I wanted to make something special since it was also going to be my last week in middle school. Last year, I had made these  graduation day cake pops for a neighbor that turned out to be pretty cute. So I decided to do something similar this year but with cupcakes.

Apple Decorated Cookies

So I normally don’t decorate cookies with royal icing, but when I got an order from my school to make these adorable apple shaped cookies, I couldn’t resist. You see, my school hosts a “Staff Appreciation” day in which a luncheon is organized just for them. I was asked if I could make cookies that looked like apples. I thought that it would be super cute to have these cookies as a part of food buffet that was organized for my teachers, and plus I don’t do enough of decorated cookies, so I said of course!

Thanksgiving Desserts

This Thanksgiving I was with my family and cousins in Tampa, Florida. And as usual, I was in charge of the desserts.

My cousins had never tasted any of my desserts before so I wanted them to try some of my specialties – that included moist and delicious red velvet cupcakes, pumpkin spice cupcakes, flourless chocolate cake and cinnamon rolls.

It was a lot of fun making these desserts even though I wasn’t in my own kitchen and I didn’t have my faithful Kitchen Aid mixer with me. But they all turned out great as all these recipes can be made by hand with just a little more effort.

Minnie Mouse Cake {Cake 4 Kids Cake #9}

This cake that I have for you today was a very fun cake to make. I designed it for a little Disney fanatic and was themed after every kids’ childhood favorite Disney character!

Nope, it’s not Mickey or Elsa, but none other than Miss Minnie Mouse. I made this cake for a non profit organization that I volunteer for called Cake 4 Kids.

Vegan Lego Cake (2 Tiers)

I don’t know about you, but I have always loved to play with Legos. First when I was younger and then later when I was older with my little brother. In fact, that was the theme of my brother’s 6th birthday cake I made for him last year.

I was so ecstatic when I got a cake order for making a Lego themed cake for a friend of my brother’s.
